Walnut and Raisin Millet Cookie – Modern
INGREDIENTS
Makes 8 large cookies
METHOD
Step 1 – Preheat the oven to 160 degree Celsius.
Step 2 – Mix all the wet ingredients in a bowl (soften ghee, lemon juice, sweetener of your choice).
Step 3 – Add the cookie mix to these wet ingredients and mix it well. Gradually add the raisins and walnuts, combine all the ingredients to make dough.
Step 4 – Take a tablespoon of dough roll into a ball and then press down with fingers onto a lined baking tray.
Step 5 – Repeat until all dough is used.
Step 6 – Bake for 10 – 12 minutes then remove & leave to cool before serving.
Millet Cookie Truffles- International
INGREDIENTS
Makes 10-15 truffles
METHOD
Step 1 – Mix all the wet ingredients in a bowl (soften ghee, lemon juice, sweetener of your choice).
Step 2 – Add the cookie mix to these wet ingredients mix & make the dough.
Step 3 – Make small round balls out of the cookie dough, place it in a tray and freeze for 2 hours.
Step 4 – Remove from the freezer and coat it with melted dark chocolate, freeze it for further 10-15 minutes and garnish it with crushed pistachio powder.
